THE MOMENT OF DEGORGEMENT

In the manufacture of sparkling wines, ‘dégorgement’ is the process of removing the yeast which has settled in the neck of the bottle after remuage. The neck of the bottle is frozen, and the bottle opened. The pressure from within the bottle shoots out the sediment.
