Cucumber: peel, hollow out. Soba noodles: cook for 6-8 minutes, cool. Mix sushi vinegar, soy sauce, sesame oil into the soba, add onions. Stuff cucumber. Pour some of the sauce and sprinkle with chopped spring onion.
