Spices: Cumin, paprika, chilli power, ginger, salt, pepper, cayenne and 4 chills. Roast sweet potatoes with some of the spice. Fry onion in wine (had no oil), add carrots and zucchini plus more spices. When veg is soft add egg plant & cook for 5 mins Add remaining species, fresh & tinned tomatoes plus beans. leave to simmer adding water and or red wine to make sure it doesn't go dry. Add sweet potatoes and a few drops of special chilli sauce. When consistency changes it is ready.
