MAKES 4 SERVINGS Ingredients: • 4 small sweet potatoes • 1lb chicken thighs • 1 cup kale pesto cheddar pasta sauce • 2 bags Green beans • 1/4 sweet onion • 3 tbs butter • Drizzle of olive oil • Garlic and herb seasoning • Salt & pepper Instructions: Sweet potato: Drizzle olive oil and salt over sweet potato and poke each one with a fork a few times, bake in the oven about 45 min at 425 or until soft. Green beans: • Preheat pan to medium high • Add a bit of water and green beans, cover until soft. • Turn heat up to high, add butter, sweet onion, salt and pepper and mix. I like to let it get a little crispy. Chicken

40min · 8 servings Garlic + herb butter chicken This weekend I meal prepped the yummiest chicken!!! I swear I’ve never had chicken the next day be just as juicy as the first!! Until now. I paired it with sweet potatoes and green beans. This makes a lot because we were meal prepping for lunches! Feel free to cut the recipe in half if you don’t want such large amount of food. Ingredients • 3lbs chicken thighs • 2 large sweet potatoes • Green beans x 2 bags Garlic + herb butter • 1 stick salted butter • 1 tbs Italian season • 1 tbs minced garlic Lay out your chicken thighs onto a baking sheet.
