His signature dish celebrates his childhood kitchen memories and retraces his career steps and experiences, with a modern Asian touch. Daniel Gottschlich, visionary chef and owner of two-Michelin-star Ox & Klee restaurant in Cologne and Puls, will be mentoring the young chef throughout the journey to the Grand Finale.
Erick Bautista is the winner of the Latin America & Caribbean Regional Final for S.Pellegrino Young Chef Academy Competition 2022-23. His signature dish celebrates his heritage, representing the connection between people and the land, and the natural resources that need to be preserved for future generations, including his daughter. Chef and award-winning cookbook author Lula Martín del Campo is the mentor who will support the young chef along the path to the Grand Finale.
