1️⃣ Vegan Spinach & Feta Empanadas

Ingredients
For the Dough:
3 cups all-purpose flour (360g)
1 tsp salt
1 cup warm water (add more if needed) (240ml)
2-3 tbsp vegetable oil
For the Filling:
200 g vegan feta cheese, crumbled (7oz)
2 cups fresh spinach, finely chopped (60g)
Fresh herbs optional, finely chopped
Instructions
Prepare the Dough
In a large bowl
Combine 3 cups (360g) of all-purpose flour with 1 tsp of salt. Gradually add 1 cup (240ml) of warm water while stirring. If the dough feels too dry, add a little more water, one tablespoon at a time, until the dough comes

Squash filling:
- 1 butternut squash 
- 2 tbsp butter
- 2 tbsp pure maple syrup
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg 
- 1/2 cup milk
- 1 cup ricotta cheese
- 1/2 tsp salt

Spinach filling:
- 1 tbsp extra virgin olive oil 
- 1 cup cooked spinach (6 cups before cooked down)
- 1 cup ricotta cheese 
- 1 cup mozzarella cheese
- 2 garlic cloves minced
- 1/4 tsp salt
- 1/4 tsp pepper

To assemble: 
Step 1: Slice butternut squash in half and remove seeds. In a bowl combine 2 tbsp butter, 2 tbsp pure maple syrup, cinnamon, nutmeg, and salt. Place mixture in the wells of the squash and brush over the squash. This will be part of your squash filling. Roast in the oven at 400 degrees for 1 hour.
