Peposo is an old Tuscan recipe of the Chianti region prepared with stewed beef meat cooked slowly in a Terracotta pot,  mainly with pepper (from here the name Peposo) and a few other ingredients. It is a symbol of old Tuscan cuisine based on genuine ingredients, simple cooking, and the  exaltation of flavours in the most simple manner.
