Ingredients:
For the Cheesecake Crust:
• 5 cups chocolate wafer cookies
• 1 cup peanuts, roasted and salted
• 1/2 cup butter, melted and slightly cooled
For the Peanut Butter Filling:
• 2 pounds cream cheese, softened
• 5 eggs, room temperature
• 1 cup dark brown sugar, packed
• 1/4 cup granulated sugar
• 1 1/4 cups smooth peanut butter
• 1/2 cup heavy cream
• 1 vanilla bean, scraped
• 12 peanut butter cups, chopped
• 1/2 cup milk chocolate chips
For the Ganache Topping:
• 2 cups heavy cream
• 16 ounces chocolate, chopped
• 1 pinch salt
• 1 cup mini peanut butter cups
• 1/2 cup peanuts, roasted, salted and roughly chopped
