Summer Veggie Gratin 1 large eggplant, cut into 1/2 inch thick slices 3 large tomatoes, cut into 1/2 inch thick slices 2-3 garlic cloves, roughly chopped 1/2 cup parmesan cheese, grated 1/2 cup swiss or gruyere cheese, grated 1 cup olive oil 1 teaspoon salt 1/2 teaspoon pepper Optional, fresh sage and rosemary for garnish

Per la farcia: 3 limoni, 4 uova, 250 gr di ricotta, 220 gr di zucchero, 80 ml di panna fresca, 20 gr di farina  Preparazione  Imburriamo e infariniamo lo stampo per crostate.  Adagiamo il disco di pasta frolla. Bucherelliamo con la forchetta.  Mettiamo in frigo per mezz’ora dopo aver coperto con la pellicola.  Prepariamo la crema.  In una ciotola lavoriamo la ricotta con la buccia grattugiata dei 3 limoni, evitiamo la parte bianca altrimenti risulterà amara.  Aggiungiamo il succo
