Tarte Tatin
• 500 g firm pears
• 200 g sugar
• 100 g butter
• 3 tbsp sugar
• A pinch of salt
• 1 sheet of puff pastry
• 10 - 15 fennel seeds (preferably fresh, or soak the dry ones overnight)
• Bake the whole thing in the oven at 180 degrees Celsius (356F) with convection for 35 minutes.
Crème fraîche:
• 200 g crème fraîche 38%
• 1/2 vanilla bean
• 1 tbsp sugar
• Serve your Pear tarte tatin with whipped crème fraîche with vanilla.
