Honey Shine - Heat 2.5 gallons of water to 160 F. while stirring in 1 gallon of honey. Once honey has dissolved, add an additional 2.5 gallons of (room temperature) water. Cool to 70F. Aerate by pouring mash back and forth between two buckets. Add 2 tablespoons yeast. Transfer to carboy, add air lock, and leave ferment for 2 weeks at room temp (70-75 degrees F). Let it settle then distill in a 5 or 10 gallon moonshine still.
