Lidia's Italy: Recipes: Ricotta Frittata - she takes 1/2" tomato slices & partially cooks with onions then removes to a plate to finish the rest.  She then places tomato slices on top of fritatta in the step right before adding ricotta.  She also doesn't use the bell peppers in the tv version.
