Roasted Sunchokes with apples & onions: cube 10 sunchokes, 2 onions, 2 apples. spread out on a cookie sheet, drizzle with lots of extra virgin olive oil plus salt, pepper & herbs de provence. roast about 20 min at 425 degrees.
