Lemon Pie Recipe - 1 large Meyer lemon, cut into 8 pieces (remove seeds), 1 1/2 cups sugar, 1 stick butter, 1 teaspoon vanilla, 4 eggs. Place all in blender until smooth, pour into pie crust, and bake at 350 for 40 minutes. I followed this recipe with no vanilla, but the vanilla would be great in it, I'm sure. Crust: 1/3 cup water, 1/3 cup oil, 1 cup flour. Bring water and oil to a boil. Remove from heat and immediately add flour. Stir to form dough, and press into pie plate.
