Clean Eating Salad ~ this just links to a photo. Baby spinach, chickpeas, whole almonds, avocado, and grilled zucchini slices. Looks like a light vinaigrette dressing. Omit the chickpeas and it's paleo. Maybe season those zukes with onion/garlic powder?
~Salad in a Jar~ these salads can be made up to 4 days in advance and will stay fresh in the fridge with a lid on. This is one of my tricks to eating salad everyday for lunch. I make a few jars on Sunday night. When you’re ready to eat, just shake it up.
