Doenjang Jjigae. A spicy korean stew not for the faint of heart. It is comfort food with a little seoul. Instead of anchovy stock, i use either fish oil, fish sauce, or dried anchovies that have been crushed. Or if you aren't into fish, chicken stock will work but also add some dried shitake or even file powder, to make up the umami flavor.
