Niger: Instructions for Maca:  * Bring two litres of water to a boil in a large pot. * Once boiling, add  oil & chili powder. * Add a pinch of salt & pepper. Reduce heat & stir. * Break spaghetti in half. * Add the spaghetti to the water. Follow the package directions for cooking times. To keep the pasta from sticking, stir during the first minute or two of cooking. * Take the pasta out of the water, strain & serve instantly.  © World Food Programme / Chris Terry #recipe

Jordan: Preparing Kubbeh: 1.	For crust, soak bulgur in ½ liter water for 2 hrs; drain 2.	Squeeze to remove water. 3.	Add ½ kg meat w/ salt & pepper. 4.	Process in food processor to a paste. 5.	For stuffing, fry extra meat w/ onions 6.	Add salt, pepper, allspice & molasses. Add pomegranate seeds once cooked 7.	Form egg sized amount of crust into a ball. Create a hole 8.
