The Mediterranean Diet 🍝 on Instagram: "Crispy Garlic Smashed Broccoli 🥦

Recipe:

This quick and tasty smashed broccoli is crispy, garlicky, and so easy to make!

Ingredients:

3 Tbsp olive oil
2 garlic cloves, minced
Pepper to taste
1/4 tsp paprika (optional)
1 large head broccoli (steamed/boiled 4-5 min)
Parmesan (optional)
Instructions:

Mix olive oil, garlic, pepper, and paprika.
Smash broccoli on a baking sheet.
Brush with garlic oil.
Bake at 400°F for 10 minutes.
Optional: Add Parmesan before baking.
Enjoy the crispy goodness!

Ingredients: Gold or red potatoes, skin on + quartered Carrots, chopped Red bell pepper, chopped Squash, chopped Zucchini, chopped 1 red onion, quartered 4 cloves garlic, roughly chopped Avocado oil Salt Black pepper Paprika Cumin For garnish: 1 lemon Parmesan cheese, shredded Fresh parsley Directions: Preheat oven to 400°F (200°C). Toss all the chopped veggies and garlic with avocado oil, salt, pepper, paprika, and cumin. Spread them evenly on a baking sheet and roast for 25-30 minutes, or until tender and golden. Once done, squeeze fresh lemon juice over the veggies, sprinkle with Parmesan cheese, and garnish with fresh parsley.
