Buttermilk panna cotta. Sprinkle 1 1/2 t unflavored gelatin over 1 T cold water to soften. Heat 1 1/4 c heavy cream, 7 T sugar, and 2" piece vanilla bean (seeds scraped) until just before it comes to a boil. Remove from heat. Stir in gelatin, then 1 3/4 c buttermilk. Strain, pour into serving containers, and refrigerate.
