Lentil ceviche: I had some leftover lentils and decided to finally try lentil ceviche. It involves diced veggies (tomato, cucumber, onion, carrot, chile), cilantro and lots of lemon juice! Mix it and eat it with tortilla chips or tostadas. Tastes even better accompanied with guacamole. It's versatile because you can replace lentils with beans, soy, etc. Also you can add any other veggies you like. Super healthy meal!
