CARROT CAKE (for phase 1 use egg white, for phase 3 use whole egg) In food processessor, grate 1 large carrot and 3 spears of pineapple. Add 1 egg (white or whole) 1 tsp vanilla, 1 tbsp mixed spices such as cinnamon, nutmeg and allspice, 1 tsp baking powder and 1/2 cup rice flour. (for phase 3 you can add a 1/4 cup nuts). Blend. Spoon into 2 ramekins. Bake at 350 for 20 minutes or until a toothpick inserted in the center comes out clean.
