Mushroom and Spinach Lasagna Rolls
Preheat oven to 375°F (190°C) and grease a baking dish. Cook lasagna noodles according to package instructions; drain and set aside. In a skillet, heat olive oil over medium heat; sauté onion and garlic until fragrant. Add mushrooms and cook until tender, then stir in spinach, Italian seasoning, salt, and pepper until wilted. In a bowl, mix the mushroom-spinach mixture with ricotta and half of the mozzarella. Spread a portion of the mixture onto each lasagna noodle, roll them up, and place seam-side down in the baking dish. Top with remaining mozzarella and Parmesan cheese.
