Fried Quinoa with Kale and Kimchi. This was so good! So easy and packed with flavor. The only thing that needs improvement is that when I added the eggs, they didn't really "scramble" - instead they kind of coated the whole thing and made a kind of sticky quinoa. So I would scramble them separately maybe with a bit of green onions, tamari, and sesame oil, and then add them to the dish. But really, yum! Definitely making again.
