Non c’è ristorante di Bari e provincia che tra i dolci della casa non annoveri gli sporcamuss. Gli sporcamuss sono dei quadratini di pasta sfoglia ripieni di crema pasticcera e ricoperti da una spolverata di zucchero a velo. Particolarità di questi dolci è che vanno serviti rigorosamente caldi, quasi bollenti, sia d’inverno che d’estate ed addentandoli ci si sporca inevitabilmente “u muss” che nel nostro dialetto significa “la bocca”.
