My easy, flavorful ricotta mixture for lasagna is the perfect cheese filling for homemade lasagna and many other Italian dishes.

Ingredients:

50g (1.8 oz) of walnuts
10 basil leaves
150g (5.3 oz) of buffalo ricotta
2 anchovies
2 tablespoons of extra virgin olive oil
Salt and pepper, to taste
2 tablespoons of grated Parmesan cheese
1 clove of garlic
Spaghetti (quantity as desired, typically 100g per person)
Chopped walnuts (for garnish)
Chopped parsley (for garnish)
Instructions:

Walnut Cream Preparation:
In a blender, combine the walnuts, basil leaves, buffalo ricotta, anchovies, olive oil, salt, pepper, Parmesan, and garlic clove.
Blend until smooth.

Cooking the Pasta:

Ingredients:
1 package (400g) David Rocco Fusilli Pugliesi
200g ricotta
8-10 marinated sun-dried tomatoes
6-7 basil leaves
1 jalapeno, sliced
1 cup grape tomatoes
1 tsp salt
4 tbsp olive oil

In a blender, puree all the ingredients while your pasta is cooking. When the pasta is about a minute pre- al dente, add it to the sauce with a cup of pasta water. Cook together until the pasta is al dente and the sauce has thickened up. Enjoy!
