Manna: the Madonie gold

The manna is the sap of specific varieties of ash trees that is extracted making by incisions on the bark of the tree. In the past, the manna was produced in many places in the south of Italy, but nowadays it is only harvested in the territories of Castelbuono and Pollina in the Madonie Regional Park.
