Flavor of Italy cooking students decided to work on the fava beans outside to take advantage of the beautiful day!

Borlotti beans in a red onion balsamic vinaigrette with just a hint of fresh basil is a delicious side or main course dish. Half the fun of it is shelling the colorful beans as you can see on the faces of these Flavor of Italy cooking class students!

Flavor of Italy has had nine year olds in three different cooking groups this week, all of them fun and enthusiastic aspiring chefs. This adorable young lady, half Japanese and half Swedish, made some awesome lemon ravioli all by herself; she prepared the filling, rolled out the dough and then free-cut the ravioli. They were delicious!
