Yellow Crookneck Squash Soup *Notes: Really good! We used 3 large crookneck and 1 zucchini-peeled and chopped but not seeded, 2 C shredded cheese and 1 C heavy whipping cream. Next time do less cheese and seed the squash- it was a little too cheesy and gritty from the seeds.*
SquashChips - How to cook/serve "warty squash" (aka the yellow fall-like squash with extra thick skin). I tried these this week. They cooked really well. My main complaint was getting the slices thin enough that the skin would be chewable.
