Blueberry Muffins (Gluten-Free)

Not the picture shown. I used this recipe as a template, calling them Lemon Berry Muffins. For the flour, I used 1/2 cup buckwheat flour, 1/2 brown rice flour, 1/2 arrowroot starch. used coconut palm sugar, and rice milk (next time will use almond milk for less calories) To reduce fat and calories, used 3 tablespoons applesauce, 1 tablespoon coconut oil. Added zest of one lemon. Stamp of approval from husband! With rice milk, 112 calories each.

Baked Parmesan Fish Recipe

Healthier and tastier way to serve fish. I have used flounder, catfish, grouper, perch and tilapia with great results. If your fish is not getting crispy try broiling it for a minute or so to get it crispy. Oh and parmesan from a can is ok but treat yourself and use freshly grated. You will be oh so happy you did.
