Black-Eyed Pea Salsa - I made this for our Mardi Gras party and it went faster than the Red beans and rice! Everyone loved it and I've had requests to bring it to other parties now. I'm posting it under salads because folks ended up eating it without the chips and it was delicious. However you choose to serve it, folks will love it!
