TACO BAKE Ingredients: hamburger (1 lb) 1 pkg taco seasoning 3 large flour tortillas (8-inch size) 1/2 c Salsa 1 1/2-2 c shredded Mexican cheese Brown ground beef. Add in taco seasoning and water (following directions on back of seasoning packet). Preheat oven to 350F. Spray an 8-inch round pan. Layer with a flour tortilla. Now add about 1/3 of the beef. Then add 1/3 of the cheese. Continue until you are done with all the layers. Bake at 350F degrees for about 15-20 min.
Stuffed Pepper Soup: Made some changes to the recipe. I used 2# of hamburger instead of 1#. Since I put it together the day before, I did not pre-cook the rice. I used 2 cups of (uncooked) rice (instead of 2 cups of cooked rice). Bumped up the beef broth to 3 cans (instead of 1) for the rice to soak up and added 1/4 cup of mild salsa for added flavor. I love stuffed peppers, and this was good.
