This is my basic breakfast muffin recipe. I make a double batch and freeze them, they warm up in the microwave perfectly. I use a regular egg and flax meal instead, and throw in anything extra I feel like... like chopped mangoes, or dried cherries, or pecans, or raisins, blueberries... whatever I have. Never make the same batch twice!!

Another winning muffin recipe- Blueberry with Almond Streusel.  Made it with almond milk and plain yogurt, with about 2 cups of blueberries.  It's also worthwhile to put the streusel in the food processor with room temperature butter.
