I've been doing this for sometime now. I make my husband a weeks worth of sandwiches, wrap them individually, and stack them back in the bread bag before I freeze them. Each morning, he takes a sandwich out of the freezer and by lunch time it is defrosted and ready to eat. I only use hardy breads like all grains, flax, etc as they don't get soggy.
