Paleasgna - no pasta, low carb, lots of veggies. I made this today and it was delish! I also added eggplant in addition to the veggies that it calls for. I'm not a fan of goat cheese, so I used a mozzarella and Parmesan mixture instead. It's not an overpowering red sauced based dish, but having a side of red sauce for those who want to add it would be a good idea!
