La Valle d'Aosta è famosa per le castagne , frutti di piccole dimensioni ma di grande qualità e gusto. Dal dolce al salato sono parte integrante di molti piatti tipici valdostani. Nel settecento regalare ad una signora marrons glaces alludeva a maliziosi significati. Ricca di amidi, proteine, vitamine A, B, C e di sali minerali la castagna ci dona i suoi frutti da ottobre a novembre. Fino al secolo scorso la raccolta delle castagne avveniva con precisi rituali.
