Red Aztec (Chenopodium berlandieri), aka Huauzontle, Red Spinach, Red Goosefoot. Domesticated by ancient North Americans. Similar to Lamb's Quarter's, with fiery red seed heads, 4' stalks. 'Quelite' cultivar is grown for its leaves, others are grown for their grain or broccoli-like heads. Use fresh in salads (whole leaves early sp, tips mid summer), saute in onion and garlic (older leaves), or dip in batter. Bright red color is retained after cooking. Tough. won't bolt.
