Thai cabbage and quinoa salad. I made this tonight for dinner while on my LID. It was tasty and satisfying, served it with a side of coconut basmati rice. Made the dressing with an extra tablespoon of vinegar (used rice vinegar) and used 1 tsp sesame oil/1 tsp canola oil. Made half the amount of quinoa it called for and eyeballed the rest of the ingredients. It was good.
