La meringa all'italiana (o meringa cotta), rispetto alla meringa francese, ha un procedimento di preparazione più elaborato. Una volta montate gli albumi si aggiunge, in alternativa allo zucchero a velo, uno sciroppo di acqua e zucchero portato alla temperatura di 110°C che cuoce e pastorizza gli albumi, per questo la meringa italiana è detta anche meringa cotta usata per la preparazione di dessert crudi (mousse fredde, soufflé e sorbetti).
