CONIGLIO ALLA ISCHIANA è un secondo della tradizione campana. Contrariamente a quanto si possa pensare, nell’isola di Ischia il piatto che più rappresenta la tradizione culinaria non è a base di pesce ma di carne bianca. I conigli erano allevati in fosse profonde alcuni metri, questo permetteva loro di scavare buche e nutrirsi con le radici delle piante: le carni del coniglio allevato in questo modo diventano particolarmente saporite.
