Francis Caracciolo (1563 – 1608) was an Italian Catholic priest who co-founded the Congregation of the Clerics Regular Minor with John Augustine Adorno. He decided to adopt a religious life at the age of 22.  In 1587 he joined the Bianchi della Giustizia (The White Robes of Justice), whose object was to assist condemned criminals to die holy deaths.  He was beatified by Pope Clement XIV in  1769, and canonized by Pope Pius in 1807.   He is a patron saint of Naples and of Italian cooks.
