Baked Zucchini Sticks ~ 3 med zucchini, cut to 3"-long sticks; 1 TBsp salt; 1c Panko bread crumbs; scant ½c grated Parmesan cheese; 1 TBsp Pizza Seasoning or Italian herbs; cooking spray; ½ cup egg substitute or 2 large eggs ~ Put sticks in a colander over a bowl & sprinkle with the salt. Let the drain for 1+ hour; rinse & pat dry. Dredge sticks a few at a time in the egg, then roll in Panko, parmesan & herb mixture. Place on a sprayed baking sheet. Bake 12 min at 425°, turn; bake 8 min.
