Easy Thai Chickpea Curry with Coconut Rice. Made this tonight and it was DELICIOUS. Changes made: 1 tbs of red curry paste instead of 2 and light coconut instead of full fat in the chickpea curry. Next time I'll add sliced carrot.
Recipe is in a different language, but from what i can tell the stuffing is just ricotta and basil pesto. You could probably add a little mozzarella as well, maybe even some Italian sausage. (Pinoli are pine nuts)
