Traditional Balsamic Vinegar of Modena DOP is different from the commercial balsamic vinegar, it is produced in a particular area, obtained from the juice of the modenese grape, aged for many years in wooden barrels and bottled by the “Consortium of the producers Antiche Acetaie”. It is contained in a official and unique bottle of 100ml, designed by Giorgetto Giugiaro.

This salad holds a place near and dear to my heart! Why? Because it is the salad I chose for the cover of my first cookbook! And it happens to be delicious. Made with tender baby spinach, topped with sweet, perfectly roasted carrots, golden toasted pine nuts, Israeli couscous and the dreamiest white balsamic vinaigrette! The dressing on this salad is smooth and creamy with no acidic aftertaste and that is because I use the best white balsamic vinegar on the market, Prelibato from the Malpighi family of Italy (affiliate link).
